It has kind of become my custom to get Chinese food on Friday or Saturday nights. After a week of cooking and getting up at 5am, I usually don’t have the desire to make a mess in the kitchen.
However, this past weekend, I was feeling a bit more ambitious and decided to see about making my own Chicken with broccoli, as I knew I had the ingredients available. You only need some chicken, a good tamari (real soy) sauce, honey, and a few other things. Start by making some of your favorite rice to use as a base. You’ll need to start brown rice early as it will take much longer to make than this recipe will!
If you don’t like spice, lessen the amount of red pepper flakes, however, I didn’t find it very spicy whatsoever. The sauce had excellent flavor and the chicken was moist. I think I will be making my own chicken with broccoli from now on! Hope you enjoy it as much as I have!
Chinese Chicken With Broccoli
2 boneless chicken breasts, diced into 1 inch cubes
1 small head broccoli cut into florets
For the sauce:
3/4 cup low sodium tamari (soy) sauce
1/4 cup honey
2 cloves of minced garlic, if desired
2 tbsp toasted sesame oil
2 tbsp rice vinegar
1 tsp red pepper flakes
1/2 tbsp cornstarch
Put on some water to boil in a steamer to cook your broccoli florets. Steam for 3-5 minutes until just crisp tender. Transfer to a colander and run under cold water to stop the cooking process. Set aside.
In a large bowl, combine all the ingredients for the sauce and place the chicken into the sauce and let marinate for 10 minutes.
In a large skillet, heat some grapeseed oil over medium high heat. Scoop the chicken out of the marinade and begin to cook. While the chicken is cooking, slowly add the sauce mixture, continuing to stir until you have enough sauce to cover the chicken, broccoli and some for the rice you use as a base. It will thicken as you stir.
Once the chicken is done, turn the heat down to low, add the broccoli and stir until warm. Serve over rice immediately.
