Deliciously Fighting Viruses/Allergies Through Diet – Breakfast Hash and Citrus Mint Salad


As described in my profile, I look to lead a healthy lifestyle and one without taking a lot of medicine, including over the counter drugs.  I’ve recently been struggling with sinus issues that just don’t want to let up.  I discovered that I have many allergies, including dogs, molds, pollen and dust mites.  However, I don’t want to take shots for 5 years, or need take Zyrtec, or something similar, every day of my life.  This prompted the research of how to fight this through my diet.  I discovered that those needing an immune boost should look to follow an anti-inflammatory diet, and possibly also eliminate nightshade vegetables and a few other types of food.

My research led me here, which I found extremely useful:

I also discovered a GREAT website where you can plan you meals with recipes included and the associate shopping list for the week in order to make the selected recipes.  It’s fully customizable to allow for Paleo, Gluten Free, Dairy Free, or simply healthy meals without any restrictions.  I love and all the recipes I have tried so far, including the ones included in this post, have been very delicious.

Now, without further ado, the recipes for the above pictured meal.

Breakfast Hash (AIP)


2 large sweet potatoes
3 cloves garlic
1 1/2 onions
3/4 pound AIP sausage
2 1/4 teaspoons extra virgin olive oil
12 ounces spinach
coarse sea salt, to taste

How To Prepare

1Peel and chop the sweet potato. Crush the garlic. Peel and chop the onion. Chop the sausage into bite-sized pieces.

2In a skillet, sauté oil and garlic over medium heat for 1 minute.

3Add in chopped sweet potato and stir.

4After 4-5 minutes, add in onion.

5Let sauté for about 5 minutes, stirring occasionally.

6Mix in chopped sausage, let cook for 5-7 minutes, stirring often.

7Mix in fresh spinach, and cook for 2-3 minutes, or until sautéed.

8Remove skillet from heat and serve hot.

Citrus Mint Salad


1 1/2 grapefruit
3 oranges
6 mandarin oranges
3/4 tablespoons fresh mint
3 tablespoons raw honey

How To Prepare

1Segment the grapefruit and oranges, and if you want to make it extra special, cut the fruit out of the membrane.

2Peel the mandarin oranges and then cut them into thin pieces.

3Combine all the citrus into a medium bowl. Chop mint. Add the honey and the mint and gently mix to combine. Serve immediately or store in the fridge for up to a week.
